NEW SPRING/SUMMER A LA CARTE MENU AS FROM FRIDAY 29TH MARCH

Our kitchen brigade really know their stuff...they bring you a menu full to the brim of complimentary flavours, textures and ideas all cooked to order and freshly prepared on the premises. We pride ourselves on our genuine in house prepared and served menu.

We're keen to get our hands on some delicious local foraged produce from the hedgerow or from the sea. Ask your server when you next visit what we've been foraging for this week!

Starters:

Chambers egg royale  scottish smoked salmon, cream cheese and dill roulade with free range poached egg served on butter brioche 6.95

Tart Tatin with caramelised shallots and wild mushrooms served with rocket, goats cheese and basil pesto. Balsamic reduction (v) 5.95

Shredded confit duck rolls served with mixed salad and a sweet plum dip 6.95

Pan fried king prawns and grapefruit salad with shallots, coconut, mint, coriander and mustard leaves. Sweet chilli and lime dressing 7.95

Seared King Scallops on creamy pea puree, crispy bacon and port reduction 8.95

Halloumi, mango and avocado salad with toasted seeds and mango dressing (v) starter 5.95 main 11.95

Pan-fried wood pigeon breast  with chicken liver parfait on garlic crouton Waldorf salad and walnut vinaigrette 7.50

Seafood Fettuccine...king prawns, squid, mussels and tomato sauce. Rocket and parmesan shavings  7.50

Cod Loin with broad bean and spring onion potato cake, asparagus, minted pea puree, sauteed king prawns and bisque sauce 14.95

Chambers fish & chips line caught haddock fillet in local Harveys beer batter. hand cut chips & Chambers tartare sauce 11.95

Roasted lamb rump with duchesse potatoes, purple sprouting brocolli, root vegetable crisps and aged balsamic jus 15.50

Stuffed chicken breast with spinach, smoked mozzarella and parma ham, served on Lyonnaise potatoes, seasonal greens and cider bourguignon sauce 13.95

Calves liver with smoked bacon, bubble and squeak,seasonal greens and grain mustard jus 13.95

Pan fried seabass fillets with creamy potato dauphinoise, green beans, mussels and mariniere sauce 16.50

Steaks:

Beef Wellington

Prime fillet of beef encased in delicious pastry with rich chicken liver paté.served with hand cut chips & tied veg. by pre-order only so please let us know on booking whether you’d like to sample our “wellie” 20.00

All steak dishes served with hand cut triple cooked chips or buttered new potatoes.

Parisian rump steak  with bearnaise sauce and watercress 15.95

Pepper rump steak a rich green peppercorn & cream sauce with a hint of cognac  16.25

Chambers Classic Rump Steak with crispy onion rings, Brighton Blue and port sauce 16.50

Fillet steak with wild mushrooms duxelles a mix of seasonal wild mushrooms with madeira and a touch of cream 19.25

Chambers surf & turf fillet steak with part peeled king prawns, crayfish, seared squid and garlic butter 19.75

Vegetarian:

Charlotte of chargrilled aubergine filled with plum tomatoes, leaf spinach, wild mushroom duxelles, sussex brie and served with sweet potato wedges, wild garlic and hazelnut pesto and chive creme fraiche (v) 12.95

Butternut squash and parmesan arancini...deep fried risotto fritters with purple sprouting brocolli and a creamy truffled wild mushroom sauce (v) 12.50

Ratatouille Puff Parcel...roasted courgettes, red onion, sweet peppers, aubergine and tomato in crispy puff pastry, basil tomato sauce and grilled asparagus salad (v) 11.95
